Title:  Process Engineering Officer (Manufacturing)

The Process Engineering Officer - Manufacturing is responsible in determining the store model that will be used, designing the kitchen layout, and assessing the capacity requirements of the stores in the system.

Under store modeling, the position is responsible in ensuring that the modeling tool being used will produce results that are aligned to the approved Greenwich store model. This said, it is critical to be up to date on actual performance of stores versus assumptions used to ensure that the store models we develop will always produce profitable stores.

In support to the store model, the position is responsible in ensuring that the kitchen layout design is compact but can still deliver efficient workflow and excellent FSC. In relation to this, the position will also be responsible in the creation of design for facilities that will help in the achievement of the ideal kitchen layout.

Lastly, the position will also be responsible for the Capacity Management for systemwide Greenwich stores. While the first 2 roles of the position are geared towards supporting store success on the first few years of store opening, the last will ensure success in the years to come thru timely resource management and store level interventions.


Key Responsibilities:
 

Store Model

  • Restaurant Planning Tool (RPT) maintenance, model review and updating
    • Close coordination with Finance and Store Development Teams on relevance of model assumptions being used.
    • Periodic feedback gathering and review of the RPT to validate bugs and other errors and to provide fixes as necessary.
    • Update RPT based on latest approved store models.

 

Kitchen Layout Standards and Design

  • Kitchen Layout Design
    • Develop an optimal Kitchen Layout Design based on actual station data, relationships of different kitchen stations as supported by sales data and computer simulation that will help the stores achieve capacity and FSC targets.
    • Work closely with other Restaurant Systems functions on areas that will impact store layout.
    • Work closely with P&D and HR on regulatory requirements that could impact store design
  • Kitchen Layout Standards
    • Develop/ create layout standards for areas of the store where there are none (ie. Manager’s Area, Crew Area, Dry Stockroom).
    • Update layout standards as needed
    • Cascade changes in layout standards to key stakeholders (Planning and Design, Store Development, HR)
  • Facilities Development
    • Develop kitchen facilities design that will support optimal kitchen layout design
    • Work closely with Purchasing and identified accredited suppliers in the Sourcing, Sampling Creation, Testing, Pilot and Standardization of facilities
    • Develop a layout design for temporary set-ups (GTG, POW, Etc.) based on parameters set by Business Channels.


Capacity Management

  • Responsible for the development, update and use of a capacity planning tool to determine long term system wide capacity capability of stores.
  • Take the lead, together with R&D and other sections of RS; in creating and updating a capacity road map that will identify activities or development opportunities that will address specific system wide capacity constraints that will arise as a result of either year-on-year company growth projections or targeted product growth.
  • Provide capacity assessment report upon request.
  • Provide assistance to stores in planning and executing capacity interventions upon request.

 

Job Qualifications:

 

  • Graduate of Industrial Engineering or a related field.
  • Must have 2-3 years of experience in capacity management and kitchen layout design.
  • Has strong written and verbal communication skills.
  • Willing to be assigned in Ortigas, Pasig City (hybrid set-up).
