Section Title: Position Summary 

Position Summary 

The Senior Crew (SC) is responsible for assisting the Restaurant Management Team (RMT) in ensuring stock levels are maintained and stored in accordance to food safety and inventory standards during his/her shift. The SC also acts as production controller who regulates the flow of food production according to the transition time of each product, as the shift requires. The Senior Crew also acts as fund custodian for the shift and ensures funds accuracy and compliance with cash control standards. The SC coordinates with the Team Leader (TL) for the delivery of expected outcomes/results by the 3P provider.

Section Title: Primary Responsibilities 

Primary Responsibilities 

  • Collects and segregates scrap items. 

  • Informs AKL of lapses and wastages in assigned stations. 

  • Informs AKL on materials for replenishment. Requests AKL for needed stocks. 

  • Receives stocks from AKL and implements FIFO procedures. 

  • Turns over scrap items to AKL for safekeeping. 

  • Implements TC level and production guide as instructed by the Assistant Kitchen Lead (AKL). 

  • Maintains station cleanliness at all times. 

  • Performs standard preparation, cooking and assembly of all products in assigned stations (either stir-fry or back-up). 

  • Prepares and completes all materials and equipment, tools and utilities (ETU) for stir-fry and back-up stations. 

  • Escalates equipment issues in assigned stations to the PQM when necessary.
